WhistlePig Rye

At Whistlepig they have a motto: Respect tradition. Embrace progress. They constantly push themselves to try new things whilst respecting the lessons from the past. With every step of whiskey making they ask themselves three questions:

  • How was this done in the past?
  • Have we learned anything since then that can make this better?
  • Is there another way to do this that’s worth exploring?

Most of the time the answer is there’s always something worth exploring.

WhistlePig all began when Raj Bhakta purchased a farm in 2007, he decided, after much consideration, to make the world’s finest and most interesting rye whiskeys. With the help of Master Distiller Dave Pickerell, they purchased stock of 10 year old blending whiskey in Canada. That misused stock is what kicked off the adventure.

The Whislepig distillery is in fact located in a 150 year old dairy barn which opened in 2015 after taking five years to convert and renovate the barn to be able to contain the unique copper pot still designed by Dave Pickerell.

In addition to the great setting, they have also searched around the globe to find some of the most interesting casks available to produce unique flavours and even developed their own cask using oak which has been produced on the farm. The results from these casks were mixed - Some failed or added nothing to the whiskey, while others added new levels of complexity and depth to the rye.

Whistlepig are proud of their innovation of wooden barrels but the favourite is the Vermont Oak Barrels which are made from trees harvested from the farm and surrounding areas. The short growing season leads to oak trees having more growth rings - So when you age whiskey and it encounters a growth ring in the barrel it brings out flavour. The WhistlePig 15 year old is finished in these Vermont Oak Barrels for one to three years which gives it the flavours we know and love - custom chars and toasts from the Master distiller brings incredible depth and complexities to the Rye.

After the release of the 12 year old World Cask Finish, it was decided that it was not perfect and so they began blending. Under the leadership of Chief Blender Pete Lynch and Dave Pickerell they involved many bartenders from all over the United States to create the finial recipe for what is now the WhistlePig 12 Year Old World Cask Finish Rye.
