Teeling Whiskey are focused on using the delicacy of Irish whiskey to layer complexity and flavour with their variation of style, time and number of barrels used during the maturing process. Walter Teeling was the first of the family to explore whiskey and upon opening a small craft distillery on Marrow Bone Lane in the heart of Dublin in 1782, he started what would be a new adaptation to the Irish whiskey world.
Today, brothers Jack and Stephen Teeling are the latest generation of the Teeling gene to steer the ship of effortless taste that the Teeling Distillery presents and in 2015 opening a new Distillery, the first new Distillery in Dublin for over 125 years, merely down the road from the original that once stood.
The small batch is the pioneer of Teeling whiskies and with hand selected casks of malt and grain whiskies which are initially aged in ex-bourbon barrels and then beautifully combined in Central American rum casks to create the dried fruit profile that people know and love. The grain implemented within gives a sweet canvas which supports the caramel and toffee notes and when the malt is added, it gives the whisky a vanilla and oak addition. Together it makes the overall flavour take on a subtle dried fruit character. Bottled at 46% ABV, with no filtration, it gives the whisky its natural character.
Teeling has a total of 4 limited edition bottlings which include Blackpitts Cask strength, Wonders of Wood, Teeling Strout cask and Spirit of Dublin Poitín. Two of these are most interesting in how they’re matured and the notes they give.
Blackpitts Cask strength is a representation of Dublin’s nickname ‘The Big Smoke’. With a BBQ smokiness and hints of fruit and maple syrup on the nose, apple and pear flavours intertwining with the smoke for the taste and a dry wood spice that fades into a smoky finish. It is bottled at 56.5%, it is a brilliant sample for winter settings.
Wonders of Wood was honoured as the ‘World’s Best Single Pot 2022’ and represents Teeling’s mission to push the boundaries of flavourings. With a sweet toffee and butterscotch edition on the nose, banana bread and ginger spices with the taste and a wood spice that lingers with developments of dark chocolate and hints of black pepper. It is bottled at 50% and gives a clear sensation of why the different barrels are used. What is interesting about this whisky is it is in partnership with the Tree Council of Ireland and will help to plant exclusively native Irish tree species in their own designated area in Wicklow.
