New World Whisky was built from the ground up to capatilise on the growing market for premium whisky both in Australia and global markets.
In 2005, David Vitale walked into a small Tasmanian distillery and was immediately captivated by the whisky world and he saw an opportunity. One to create a modern whisky unshackled from tradition.
Plan in mind and developed, in 2007 the company was launched and by the beginning of 2010, Starward whisky was being filled into barrels to make a new spirit.
The distillery uses almost exclusively Apera (Australian sherry style) barrels which are hand selected, painstakingly re-coopered, re-toasted and re-sized.
The barley used is 100% Australian and adds to the provenance of the whisky. By working hand in hand with the maltster and by using a bespoke Australian malted barley to suit specific requirements, a balanced cereal note providing a mouthfeel was achieved.
