In 1824 Macallan was one of the first distillers in Scotland to be legally licensed, since then, they have become one of the world leaders in single malt whisky. The distillery was founded by Alexander Reid, a barley farmer and school teacher. Farmers had been making whisky on their Speyside farms for centuries, however under pressure Reid licensed his distillery and Macallan was born.
The name Macallan came to be from the original name of the area “Maghellan”. This derives from the gaelic word “Magh” meaning fertile ground and “Ellan” who was the monk St. Fillan who held a close association with the church that stood in the grounds of the Macallan estate until 1400.
Macallan pride themselves on using the very best oak casks. To obtain these incredible casks Macallan works closely with fully integrated ‘tree to finished seasoned cask’ companies in Spain. With these companies Macallan get to identify the oak trees in the forests of Spain, they then cut the trees down, saw and air dry the wood before shipping. The casks are then seasoned for 18 months before making the final trip to Scotland. Once the wood has been through that process it is then get hand picked by the master of wood and delivered to the Macallan whisky mastery team for inspection, after which they are filled with The Macallan spirit.
For every expression Macallan have made, the quality of the whisky is dependent on the excellence of the oak casks it is matured in, as well as the quality of the ‘new make’ spirit distilled from water, yeast and barley. Up to 80% of Macallans final character is determined by cask quality which is why it is the most prominent factor in delivering the perfection and style of their single malt.
The Macallan's 24 copper stills are amongst the smallest on Speyside, holding 3,900 litres. Known as Curiously Small Stills, their unique size and shape give the spirit maximum contact with the copper, which helps to concentrate and provide the rich and fruity characteristics of Macallan.
