Famed for his Sherry cask maturation expertise, Billy Walker selected this exceptional Pedro Ximénez hogshead (2009, #804970) to be bottled.
The smaller size of this cask has injected an intense depth of both colour and flavour to our honeyed spirit, offering up a palate abundant with dark chocolate shavings, rich butterscotch and hints of sweet spices.
The resulting malt delivers a sophisticated drinking experience with a velvety texture, making for a truly indulgent expression.
Bottled at 57.7%, unchillfiltered and natural colour, this expression is available exclusively in the UK.
Nose: Notes of baking spices, chocolate and heather honey, with citrus, ginger and truffle oil.
Palate: Bursting with chocolate buttercream, plum jam and treacle.
Finish: Followed by crystalised ginger, bananas and cinnamon, with caramel on the finish.
