This 20 year old single malt originates from Hawk’s Rock Distillery in County Sligo, Ireland.
Master Blender Helen Mulholland, first female in her role in Irish Whiskey designed this limited-edition release.
The spirit is double-distilled and matured for 14 years in ex-bourbon American oak casks and then finished for at least six years in Muscat, Sauternes, Pedro Ximenez sherry and Barbadian rum casks.
Serve neat or with a splash of water to reveal more fruit and floral layers. Pair with buttery desserts, stone fruits or mild cheeses to complement the vanilla, citrus and raisin character.
Bottled at 47 % ABV, with natural colour and no chill filtration noted.
Nose: Aromas of vanilla, warm peach, spun sugar from the Sauternes, plus floral and raisin from Muscat and PX sherry.
Palate: Buttery ripe apples, fresh citrus, sweet vanilla and juicy fruit, balanced by oak spice and rum cask warmth.
Finish: Lingering fruit sweetness, gentle spice and oak, with layered raisins and soft florals to close.
