Francis uses his own excellent barley, distilled on a small scale, to produce Daftmill Single Malt whisky. Made with Optic barley, grown on their south fields.

A heavy maturation period in a sherry cask gives this Daftmill a rich and fruity character. There is some warming spice which lingers, with oak also.
