Bollinger has land-owning roots in the Champagne region dating as far back as the 16th century.
In the late 19th century the prestige image of the brand began to develop and it even became the official supplier to the British court, receiving the Royal Warrant from Queen Victoria.
The grapes are from grand cru vineyards, which explains the generous, full-bodied Bollinger style. Other factors that come into play include a first fermentation in oak and a minimum of 36 months aging before disgorgement.
Colour: Golden with distinctive black grape varieties.
Nose: A beautiful, aromatic complexity. Ripe fruit, spicy aromas, with hints of roasted apples, apple compote and peaches.
Palate: A subtle combination of structure, length and vivacity before flavours of pear, brioche and spicy aromas hit the palate as finally there are notes of fresh walnut.
Pair with all fish, especially sushi and sashimi, shellfish such as shrimp, prawns, crayfish and grilled lobster, poultry and white meat, cashews, parmesan or prosciutto.
