Klippenkop wines are produced by the Robertson winery which due to such high demand for their wines the winery now operates 24/7 - demand that has frequently been justified by the praise of John Platter in his famous guide to South African wines.
Machine harvested at night, chilled and pneumatically pressed - the juice is then run off to stainless steel tanks for fermentation using selected yeasts with temperatures kept below 17C to maintain fruit purity.
Mlf is blocked to maintain aromatics and freshness.
Aged on the fine lees for 3 months before bottling.
