Tasting Notes

Paul John Edited:
Nose: Honey and cocoa are laced with a hint of smokiness and a shot of espresso. A deeper whiff reveals fruity fragrances.
Palate: The grassy flavours of barley show up first, but gently make way for subtle peat notes. They slowly dissolve and pave the way for a rush of mint and mocha.
Finish: The finish is long and drawn out. You can sense a hint of spice and chocolate mint as it ends on gentle peat notes.

Glenfarclas 105:
Nose: Complex, oaky, fresh fruit of apples and pears, and a tempting dark toffee sweetness.
Flavour: Dry and assertive but develops quickly to reveal a rich spiciness, combined with a hint of oak and sherried fruit.
Finish: Amazingly smooth for the strength; wonderfully warming and with a lingering smokiness.

Lagavulin 16 Year Old:
Nose: One of the smokiest noses from Islay, it's big and very concentrated and redolent of iodine. Also there are sweet spices, good mature sherry and creamy vanilla.
Palate:Very thick and rich. Malt and sherry heavily feature with good fruity sweetness, but also a wonderful sweetness.
Finish: Long and spicy finish. Figs, dates, peat smoke and vanilla all last well into the long and spice filled finish.

Talisker 57 North:
Nose: Very pungent and full. Notes of sour citrus develop with rich peat smoke. Hints of peppered oak and notes sea spray pounding stones and a little kelp.
Palate: Thick and full. Creamy manuka honey and lemon juice, notes of peppered oak and spice, a little butter perhaps and plenty of dry wood.
Finish: Long with black pepper and dry oak.

Balcones Texas Single Malt:
Nose: Notes of fresh baked banana bread with undertones of honey, vanilla and a hint of cedar wood. There is also tones of roasted chestnuts and full cream.
Palate: Apple and orchard fruits. Brown sugar makes an appearance and transforms into molasses.
Finish: Warm, woody spices and subtle hints of breadiness, but not maltiness.
