Domaine Vessigaud is a small property, established in the 18th century and encompassing some of the very finest vineyard plots in Pouilly-Fuissé.
Current winemaker, Pierre Vessigaud, is the latest of a long line of winemakers in the family, each passing down tradtional winemaking methods to the successive generations.
The chardonnay grapes of the Vielles Vignes Pouilly-Fuissé are grown on older vines, between 40 and 80 years old.
All grapes are harvested by hand and pneumatically pressed as whole bunches. Local yeasts are used in the fermentation, which lasted 60 days, to ensure the distinct terroir of the grapes shine through.
Fermentation was done in a combination of stainless steel tanks, casks and large oak barrels.
The wine ages for 12 months in 5 year old French oak barrels.
