The selection process in Yquem is particularly stringent, with a local saying holding that a single vine makes a single glass of wine.
Foods that are either bitter, acidic or overly sweet will disturb the beauty of this wine, so pair it instead with rich meats such as foie gras or white meats.
Nose: Sauvignon blanc’s steely minerality is immediately present on the nose, along with aromas of soft jasmine and very ripe apples.
Palate: White peach and pineapple flavours dominate on the palate, which is full yet balanced.
Finish: With plenty of acidity from zesty lemons and slate.
