Each new Octomore generates a huge amount of anticipation and excitement not to mention each is necessarily unique, limited, finite, a celebration of nuance and this Octomore 07.1 certainly lives up to that.
The Octomore 07.1 is a 5 year old single malt which has been barley harvested from mainland Scotland and was peated to 208ppm. Five years in American oak, bottled at 59.5% ABV, Octomore stands alone.
Colour: Summer sun on Hebridean sand.
Nose: Initially sea spray and caramel, lemon balm and pipe tobacco as slowly, the peat smoke rises from the glass gently and strong which introduces delicious vanilla, mint, toffee, golden syrup and almond.
Palate: The American oak influence is in perfect tune with the smoke and soft fruits. Vanilla, honey and citrus all rise up to be met with sea spray and leather. Smoked mussels mixed with autumn bracken and creme brûlée.
Finish: As the sweetness from the oak fades, salt arises while the gentle peat smoke steady and true grows and outlasts all else.
forget about the age. Don't be frightened by the phenol levels. Great whisky is not about numbers. It is about excellent distillation and careful maturation. Here you have a memorable combination of both .
